I am a huge pasta lover! Growing up on an island so close to Italy, pasta has always been a staple in my diet. Now that I am more aware about choosing nutritious foods, I know that pasta should be a once in a while treat.
To help satisfy my pasta cravings I create a healthier version of traditional pasta using zucchini in place of pasta noodles. I have even discovered a fab tool called a julienne peeler (or spiralizer) to aid in this endeavor. The one I own looks like a potato peeler but has a blade with teeth to slice veggies in thin, noodle-like strips.
1. To create my healthy pasta I use two medium sized zucchini. You can peel the zucchini first using a normal vegetable peeler, but I don’t mind the peel so I use the julienne peeler right away. Just hold the zucchini on a board and slide the peeler along the length of it.
2. In a frying pan heat some oil (I use coconut oil) and add the zucchini. Since they are sliced so thinly the zucchini will cook in 4-5 minutes.
3. Toss in some mushrooms or other extras, whip up a tomato sauce, and enjoy!
BONUS: In total, this meal takes under 20 minutes to prepare!
The Julienne peeler can also be used to spice up traditional dishes. One of my favorite nutritious meals is a frittata. I now use this peeler to add more veggies to the dish; I julienne zucchini and carrots, sauté them in coconut oil with mushrooms and spinach, then add the eggs.
Surprisingly, finding a julienne peeler in Hong Kong is a little tricky, but I found a few different (an inexpensive) varieties at Shanghai Street in Yau Ma Tei.
